Südtiroler Gewürztraminer DOC This family name identifies the uncompromising care in the vineyard and cellar technology. Optimum harmony between growth and harvest, only a fully ripe harvest and balanced maturity are the requirements here. Amistar is a philosophy – it begins in the vineyard and matures in the enjoyment of a glass. Vine variety: 100 % Gewürztraminer – autochthones vine variety Description: This Gewürztraminer convinces by its intense aroma of roses and cloves and also by its aroma of dried fruits. Plenty of body and structure, sweet hint of honey and juicy in the mouth, and the flavour remains continuously and harmoniously on the palette for a long time.
Position: Laifai in Girlan
Land: Sandy, stony chalk land.
Harvest: Various harvest times because of the classical harvest and a little later for the late vintage. Middle to end of September (= 10 % dried grape harvest). The Amistar concept requires a minimum of 19.0° KLM and dried grapes.
Development: White wine pressing. Depending on the ripeness, a short standing period is carried out after mechanical removal of the stems and specifically macerated. The mash is then pressed and the must is left to stand in a stainless steel tank for natural clarification for one day. The must is then fermented in a stainless steel tank at controlled temperature. It is important that, after fermentation is completed, we also use the SurLie process in order to keep the fine yeast afloat and thus guaranteeing the extraction and development

Serving temperature: 12 °C
Food recommendation: Shellfish and crustaceans, grilled sea fish and white meat and also for Asian dishes, Antipasti and also to various mould cheeses made of goat, sheep and cow’s milk. Also particularly interesting with pâtes. |
