Alto Adige Vernatsch / Schiava DOC

BellDèS is the cooperation with the vineyards from our winemaker Christian Bellutti and our vineyards (DèSilva). The whole vineyards from both have to be manufactured in our Winery and the wines are made especially for the Gastronomy like Restaurants, Hotels and so on. Our Goal is to work just with a selected quality and an interesting price class of autochthonous varieties like Schiava, Lagrein and Gewürztraminer to show the customer the typical varieties from this region.

Vine variety: 100% Vernatsch

Description: The native tendril Vernatsch is characterized by fruity notes with a hint of almond and violet. Ideal us an antipasto and with speck, white meats and sweet cheeses.

Position: Vineyards around the lake Caldaro until the village Tramin. Here again old vines set the tone. One of our oldest vineyard sites with deeply rooted vines.

Land: Loamy to sandy land 
Harvest: End of September.
Yield: Approx. 100 hl/ha.

Development: Mechanical removal from the stems, traditional mash fermentation in stainless steel tanks at controlled temperature. Juice extraction is carried out when fermentation is completed in order to assist the biological acid degradation. When the BAD is completed this Vernatsch is ready to be prepared for filling.

Shelf life: At least 3 years

Serving temperature: 14-16 °C.

Food recommendation: It is a wine for in between. Its strength is its adaptability to food, to tapas and typical South Tyrolean dishes such as bacon, dumplings, Schlutzkrapfen, Surfleisch and homemade meats with Sauerkraut, buckwheat “Riebel”, but also white meat and mild cheese and even to fish. It is a flexible and a particularly adaptable, light red wine.
